Springbank1979 11 Year Old Sherry Cask
Founded in Edinburgh in 1983 by Phillip ‘Pip’ Hills comes The Scotch Malt Whisky Society. His passion for whisky started when he was travelling around the country in the 70s. After which, it took his little time to purchase his first cask with a group of friends. Many years later the syndicate was purchase by Glenmorangie PLC.
Distilled at the Springbank Distillery in December 1979, this single malt underwent maturation until it was bottle in September 1991.
Springbank1979 11 Year Old Sherry Cask Refill Sauternes – 57.2%, $180
Nose: Tart berries, grapefruit, slight caramel, sooty ash, funky.
Taste: Caramel, oak, grapefruit, ashy, slight earthy, funky, tangy, slight umami. Medium to full mouthfeel.
Finish: The caramel and grapefruit hold for a moment then fade, the funk and earthy notes fade as well, the tangy holds with the umami and oak. Medium length.
Notes: A nice influence from the cask that doesn’t overpower the base spirit. Very good stuff.
Fans of Springbank won’t be disappointe with it certainly and it’s another solid 18. The sherry elements are quite forward considering the higher percentage of bourbon casks in the mix so I’m pleased they didn’t go for a higher sherry cask ratio. Is such I am preferring this to last years entry, those with a sherry head might disagree. Not quite reaching the highs of the 2018 all bourbon affair though. As you can guess from the name of this series of special Springbanks, the Bere barley used for this 11-year old Springbank didn’t come from Orkney. It came from the Kintyre peninsula – Aros Farm to be exact, which is less than three miles from the distillery, and since there are no farms within “the wee ‘toon” of Campbeltown itself you can’t get much more local than that. This being a Springbank single malt of course means that the barley was lightly peated to roughly 15 ppm, and that it was 100% floor-malted on-site at the distillery, and that it has been distilled a sum total of 2.5-times through a complicated regimen where at the end of the process some of the spirit is only distilled twice, while some is distilled three times. And that process includes Springbank’s direct-fired wash still and worm tub condenser-equipped second still / first spirit still. The ABV here is “only” 53.1% in this case, which is the lowest in the series so far, and that may have been due to that lower yield from the Bere barley, or it may just be natural variation.
